Known for his strong leadership, technical precision, and calm command under pressure, Rafael has built a career defined by consistency, mentorship, and an unwavering commitment to excellence.
Most recently, Rafael served as Senior Sous Chef at Via Sophia within the Hamilton Hotel. Before that, Rafael spent several formative years with Fiola Mare, part of Fabio Trabocchi Restaurants, where he mastered pasta and fish cookery, assisted in menu development, and led teams in one of the city’s most acclaimed fine dining environments. His earlier experience at Le Diplomate and Oya Restaurant further refined his expertise in French, Italian, and Latin American cuisine, as well as butchery, bread, and pasta production.
At Acqua Bistecca DC, Rafael brings his deep technical foundation, passion for Italian-inspired cuisine, and collaborative leadership style to the culinary team.
