The award-winning Forbes 4-Star and AAA 5-Diamond Waldorf Astoria Monarch Beach Resort & Club is looking for a Sous Chef to join the Bourbon Steak Team!
Located in the beautiful coastal town of Dana Point adjacent to Laguna Beach, this town played an iconic role in the emergence of California's surf culture and today is celebrated for its laid-back vibe and fun, active lifestyle.
The resort is perched on 175 acres atop a 150-foot seaside bluff with over 400 rooms, 115,000 square feet of indoor and outdoor meeting space, and 8 food and Beverage outlets. This includes 4 restaurants, a beach club, lounge, marketplace, and in-room dining.

Classification: Full-Time
Shift: Various – must be available to weekdays, weekends, and holidays.
Pay Rate: The pay rate for this role is $29.00 per hour and is based on applicable and specialized experience and location.
What will I be doing?
As a Sous Chef, you would be responsible for assisting in the oversight and preparation of all culinary operations in accordance with recipes and Waldorf Astoria’s luxury standards, contributing to the hotel’s mission to deliver exceptional service and culinary excellence. Specifically, you would be responsible for performing the following tasks to the highest standards:
Supervise and support daily kitchen production, including hot line, banquets, and specialty menu items.
Assist the Executive Chef in menu development, recipe testing, and seasonal innovation across all outlets.
Possess a working knowledge of pastry to assist with dessert service and support the pastry team when needed.
Ensure all dishes are prepared according to designated recipes, quality expectations, and presentation standards.
Oversee and train junior kitchen staff, providing guidance and leadership to maintain high productivity and morale.
Maintain cleanliness and organization of all kitchen areas, ensuring compliance with food safety and sanitation regulations.
Manage inventory and requisitions for ingredients and supplies, ensuring proper cost control and stock levels.
Inspect all food products prior to service to guarantee quality, consistency, and guest satisfaction.
Collaborate with culinary and service teams to ensure seamless coordination for à la carte service, banquets, and special events.
Uphold Waldorf Astoria’s luxury service standards while fostering an environment of creativity and excellence.
