Jim O'Connor
Executive Chef – Outlet Culinary LeadershipChef Jim O’Connor is a seasoned culinary leader with experience across luxury resorts, private clubs, and fine dining restaurants nationwide. A Long Island native and graduate of the Culinary Institute of America, he began his career in Manhattan before cooking in Vail and later in Northern California, where he worked under Michelin-starred Chef James Syhabout and sharpened his passion for seasonal, ingredient-driven cuisine. Jim went on to open The Grove Country Club in Nashville as Executive Chef and later led culinary programs at Montage Big Sky, Conrad Nashville, Naples Grande Beach Resort, and Hawks Cay Resort. Known for his calm, hands-on leadership and commitment to creating memorable guest experiences, he excels at building strong teams and driving consistency and excellence. Jim is excited to bring his experience and creative approach to Acqua Bistecca and support a successful opening.
